Caldo Verde

Ingredients
- Onion: 1
- Garlic cloves, minced: 2
- Chichen sausage, cut into 1/2 in pieces, casing removed: 1/2 lb.
- chicken broth: 4 cups
- medium potato, peeled, cubed (or sweet potato): 1
- stemmed and shredded kale: 4 cups
- salt: 1/2 tsp.
- freshly ground pepper: 1/2 tsp.
- hot pepper sauce: 3 dashes
Directions
Spray a large pot with nonstick cooking spray; add onion and cook over medium heat, stirring often, until softened, about 5 minutes. Add the garlic and cook for 20 seconds. Add the sausage, cook until browned, about 5 minutes. Pour in the broth, bring to simmer, stirring often. Add potato and kale cook until kale and potato are softened, about 12-15 minutes. Add salt, pepper and hot pepper sauce.
