Ingredients

  • Onion: 1
  • Garlic cloves, minced: 2
  • Chichen sausage, cut into 1/2 in pieces, casing removed: 1/2 lb.
  • chicken broth: 4 cups
  • medium potato, peeled, cubed (or sweet potato): 1
  • stemmed and shredded kale: 4 cups
  • salt: 1/2 tsp.
  • freshly ground pepper: 1/2 tsp.
  • hot pepper sauce: 3 dashes

Directions

Spray a large pot with nonstick cooking spray; add onion and cook over medium heat, stirring often, until softened, about 5 minutes. Add the garlic and cook for 20 seconds. Add the sausage, cook until browned, about 5 minutes. Pour in the  broth, bring to simmer, stirring often. Add potato and kale cook until kale and potato are softened, about 12-15 minutes. Add salt, pepper and hot pepper sauce.
