Mexican black bean bowl

Ingredients

  • chicken, cubed: 4
  • onion, finely chopped: 1 cup
  • chicken broth : 14 oz can
  • diced tomatoes, mexican seasoned, undrained: 1 14.5 oz can
  • black beans, drained and rinsed: 1 15 oz can
  • corn, frozen: 1 cup
  • green chilies, mild: 1 4 oz can
  • chili powder: 1 Tbs
  • cumen, ground: 1 tsp
  • salt: 1 tsp
  • sour cream (opt.):
  • avacado sliced (opt.):
  • cheese (opt.):
  • tortilla strips fried (opt.):

Directions

  1. Spray crockpot.  add all ingredients except optional toppings.  Cover, cook on high 3-4 hours. 
  2. Stir well and top as desired.
