Italian Sausage Soup

Ingredients

  • --Sausage Meatballs--:
  • italian sausage, mild: 1 lb
  • bread crumbs: 1/2 cup
  • parmesan cheese, grated: 1 cup
  • milk: 1/4 cup
  • egg: 1
  • basil: 1/2 tsp
  • pepper: 1/2 tsp
  • garlic salt: 1/4 tsp
  • --Soup--:
  • chicken broth, hot: 4 cups
  • tomato paste: 1 Tbs
  • garlic, minced: 1 clove
  • red pepper flakes: 1 tsp
  • shells, mini or other tiny pasta: 1/2 cup
  • spinach leaves 10 oz: 1 bag
  • parmesan cheese:

Directions

Combine all meatball ingredients, form into marble size balls. 

 

Combine broth, tomato paste, garlic, red pepper flakes in crock pot.  Add meat balls. Cover and cook on low 5-6 hours. 

 

30 minutes before serving add pasta.  When pasta is tender stir in spinach leaves.  Sprinkle with parmesan cheese in serving bowls.
