Cinnamon Butterscotch Banana Bread

Ingredients

  • sugar: 1 cup
  • butter, room temperature (unsalted): 1 stick
  • eggs, large: 2
  • bananas (ripe or over-ripe): 3
  • milk: 1 Tbsp
  • cinnamon: 1 tsp
  • flour: 2 cups
  • baking powder: 1 tsp
  • baking soda: 1 tsp
  • salt: 1 tsp
  • butterscotch chips (optional) : 1 package

Directions

  1. Preheat oven to 325
  2. Cream sugar and butter until fluffy
  3. Add eggs one at a time beating well after each
  4. In a separate bowl mash bananas then mix in the milk and cinnamon
  5. In another separate bowl mix flour, baking powder, baking soda, and salt
  6. Add banana mixture to wet ingredients and stir
  7. Add dry ingredients and stir until flour disappears 
  8. If using butterscotch chips it helps them not sink to the bottom if you'll coat them with flour and then mix them into the batter.
  9. Pour into a greased loaf pan (9 X 5 X 3)
  10. Cook for 1 hour and 10 minutes or longer as needed until a toothpick comes out dry 
  11. Let stand 15 minutes to cool and settle

This recipe can be doubled and works well that way. We've also substituted canned pears or applesauce in place of a banana when necessary.
