Cinnamon Butterscotch Banana Bread

Preheat Oven: 325°F

Ingredients
- sugar: 1 cup
- butter, room temperature (unsalted): 1 stick
- eggs, large: 2
- bananas (ripe or over-ripe): 3
- milk: 1 Tbsp
- cinnamon: 1 tsp
- flour: 2 cups
- baking powder: 1 tsp
- baking soda: 1 tsp
- salt: 1 tsp
- butterscotch chips (optional) : 1 package
Directions
- Preheat oven to 325
- Cream sugar and butter until fluffy
- Add eggs one at a time beating well after each
- In a separate bowl mash bananas then mix in the milk and cinnamon
- In another separate bowl mix flour, baking powder, baking soda, and salt
- Add banana mixture to wet ingredients and stir
- Add dry ingredients and stir until flour disappears
- If using butterscotch chips it helps them not sink to the bottom if you'll coat them with flour and then mix them into the batter.
- Pour into a greased loaf pan (9 X 5 X 3)
- Cook for 1 hour and 10 minutes or longer as needed until a toothpick comes out dry
- Let stand 15 minutes to cool and settle
This recipe can be doubled and works well that way. We've also substituted canned pears or applesauce in place of a banana when necessary.
