Lemon squares

Ingredients

  • flour: 2 cups
  • powdered sugar: 1/2 cup`
  • butter, soft: 1 cup
  • vanilla: 1 tsp
  • sugar: 2 cups
  • cornstarch: 2 Tbsp
  • eggs, large: 5
  • lemon rind, grated (gross and optional): 1 Tbsp
  • lemon juice: 1/4 cup + 2 Tbsp
  • butter, melted: 2 Tbsp
  • powdered sugar: 2-4 Tbsp

Directions

Combine first 4 ingredients; beat at medium speed of an electric mixer until blended.  Pat mixture into a greased 9 X 13 pan.  Bake at 350 for 18 minutes or until golden.  

Combine 2 cups sugar and cornstarch.  Add eggs and next 3 ingredients; beat well.  Pour mixture over crust. 

Bake at 350 for 20-25 minutes or until set.  Let cool.  Chill well.  Sift powdered sugar over top and cut into any shape you feel like.  Garnish with lemon rind, if you feel like being gross.
