Fresh Tortellini Au Gratin

Ingredients
- mild Italian sausage: 1/2 lb
- onion chopped: 2 Tbsp
- package fresh cheese-filled tortellini: 9 oz
- cloves garlic, unpeeled: 3
- whipping cream: 1/2 c
- chicken broth: 1/2 c
- freshly grated parmesan cheese, divided: 1/2 c
- minced fresh parsley: 1/2 c
- minced fresh basil: 1 1/2 Tbsp
- pepper: 1/8 tsp
- jar diced pimiento, drained: 2 oz
- dry breadcrumbs: 2 Tbsp
- butter: 1 1/2 Tbsp
Directions
Remove and discard casings from sausage. Cook sausage and onion in a skillet over medium heat until browned, stirring until meat crumbles. Drain.
Cook cheese tortellini according to package directions, adding unpeeled cloves of garlic to water. Drain well, reserving garlic. Set tortellini aside. Peel and acrush garlic. Combine garlic and whipping cream in a medium bowl; beat with a wire whisk until blenede. Add reserved sausage mixture, tortellin,, chicken broth, 1/4 cup plus 2 tablespoons parmesan cheese, 1/4 c minced parsley, minced basil, pepper, and pimiento; stir gently.
Place trorellini mixture in a 1 quart baking dish. combine breadcrumbs and remaining 1/4 cup parsley; stir well. Sprinkle breadcrumb mixture over tortellini; dot with butter.
Bake at 325 for 40 minutes. Sprinkle remaining 2 tablespoons parmesan cheese over breadcrumbs; bake 5 additional minutes or until lightly browned.
