Mexican Burger Bar

Ingredients

  • -BURGERS-:
  • ground beef: 2 lbs
  • worcestershire sauce: 1 Tbsp
  • salt: 1/2 tsp
  • ground black pepper: 1/4 tsp
  • colby and monterey ack cheese blend: 8 slices
  • kaiser rolls or hamburger buns, split: 8
  • -MEXICAN SANDWICH SPREAD-:
  • mayonnaise: 1/4 C
  • sour cream: 1/4 C
  • pantry southwestern seasoning mix: 1 1/2 tsp
  • -MEXICAN TOPPERS-:
  • medium tomatoes, sliced: 2
  • large avocado, peeled and sliced: 1
  • pickled jalapeno pepper slices, drained: 1 C

Directions

1. For burgers, crumble ground beef into bowl.  Finely chop onion and add to bowl with worcestshire sauce, salt and black pepper; mix gently but thoroughly.  Form mixture into 8 round patties, 1/2 inch thick.  Refrigerate, covered, until ready to grill.

2. For Mexican sandwhich spread, combine mayo, sour cream and seasoning mix in bowl; mix until well blended. Cover and regrigerate.

3. For Mexican toppers, slice tomatoes, and avocado. place in individual serving bowls, cover and regrigerate.

4. When ready to grill, prepare grill for direct cooking over medium coals.  Place patties on grid of grill.  Grill, uncovered, 11-13 minutes or until centers are no longer pink, turning once. About 1 minute before burgers are done, place cheese slices on top.

5. Meanwhile, place roll halves, cut side down on grid of grill.  Grill 1-2 minutes or until rolls are lightly toasted.  Place burgers in rolls.  Serve with spread and toppers.
